Michelin-starred Chef Juan Manuel Barrientos — aka “Juanma” — has opened a new restaurant that brings the flavors and culture of Cartagena De Indias to Miami’s South Beach.
The menu features small bites such as Carimañola (Crispy Yuca, Pork, Avocado Aji and Suero Costeño); Corn Buñuelo, Sweet Corn Tempura; Croquetas De Ropa Vieja, made with Braised Beef, Plantain, Peanut Aji and Jalapeño Sauce; and Arepa De Huevo — Quail Egg and Sweet Pepper Suero Costeño.
There’s a selection of ceviches including Lulo Yellowtail, Scallop & Passion Fruit and Tuna Tartare. The extensive Salad, Vegetables and Rice menu offers hearts of palm, mango and artichoke, yuca sticks and grilled bok choy.
There is a wide variety of protein dishes. Roasted Chicken with Guanciale Mushroom Duxelle and Pickled Onions; Seafood Cazuela with Coconut Bisque, Cocada, Parsley Oil and Lime Air or Wagyu “Al Trapo” Adobo Rojo with a Wine Reduction are favorites.
End the meal with a Coconut Rum Sponge made with Toasted Coconut Marshmallow, Panela Caramelized Pineapple Charred Pineapple Gel and Coconut Ice Cream or Mucholate, a Milk Chocolate Mousse made with Almond Chocolate Financier, White Chocolate Namelaka, Dark Chocolate Glace, Ruby Chocolate Cremeux and Mocha Ice Cream.
