Executive Chef and owner Raz Shabtai wanted to pay homage to his grandmother, who taught him much of what he knows about cooking, so he named his restaurant after her.
The Israeli-born Shabtai, whose mantra is “food is holy,” brings to Mutra an innovative dining concept drawing on culinary traditions from around the globe, many of which can be found in his hometown of Jerusalem.
The menu, which focuses on farm-to-table ingredients, includes dishes like Beet 3 Way Salad with vegan tzatziki, featuring pickled beets, grilled beets and ribbons of torched beets along with Kalamata olives, chermoula salsa, tiny arugula, radish, angel hair scallion, black olive powder and candied almonds. Those craving an Israeli staple will want to sample 1 Perfect Falafel — a falafel croquette, Tahi-Amba, tomato gel, Israeli salad, zaatar, pickled red onion and micro cilantro.
Other options include 1000 Layers Steak with Tahi-Amba, Burned salad, Anaheim hot pepper and grilled pita and Uzbeki Seniya, a lamb kebab with Har Bracha tahini, roasted red onion, sweet harissa, amba, tomato foam and Uzbeki apricot salad.
To ensure fresh, seasonal ingredients, the menu changes regularly.
For dessert, sample Frishmen Malabi, a coconut custard with rose water, pistachio crumble, rose syrup and coconut flakes or Katayef — lemon gelato, caramelized nuts, sumac and simple syrup.
