Live Bluefin Demonstration Draws Crowd At Royal Palm Place Restaurant
A sold-out crowd gathered at Royal Palm Place on June 30 for a live tuna-cutting ceremony hosted by Sushi by Bou.
During the event, chefs broke down a 250-pound bluefin tuna sourced off the coast of Baja California, Mexico, before nearly 40 guests. The tuna was broken down and served on the spot, offering diners a firsthand look at the preparation process and a taste of freshly cut sashimi.
The chefs served lean akami, medium-fatty chu-toro and buttery o-toro in several preparations, including lightly torched and as hand rolls. Accompaniments such as yuzu and fermented garlic highlighted the distinct qualities of each.
Diners also sampled maguro nakaochi, tender tuna scraped from between the rib bones and prized for its delicate texture and rich flavor.
The demonstration added a visual and educational component to the restaurant’s omakase experience. Sushi by Bou sources its bluefin through suppliers such as Bluefina, with an emphasis on responsible wild-caught practices.
