Café Boulud at the Brazilian Court Hotel will welcome guests for an immersive wine dinner celebrating Château La Nerthe, one of the Rhône Valley’s most historic estates, on Thursday, April 16. Designed as a relaxed yet refined evening, the experience brings together classic French technique, thoughtful wine pairings and a setting that favors conversation as much as cuisine.
Founded in the 16th century, Château La Nerthe is among the oldest estates in Châteauneuf-du-Pape, with vineyards that have shaped the region’s reputation for centuries. Now stewarded by the Richard family, the estate is known for its organic practices and wines that emphasize balance, elegance and a clear sense of place.
The evening unfolds under the guidance of executive chef Christopher Zabita, chef Patissière Rosana Quintero and head sommelier David Sauer, with host Roman Aujolat representing the estate. A reception precedes a five-course dinner that traces Château La Nerthe’s evolution through both white and red expressions, including current releases and a mature vintage that offers a glimpse into how the wines develop over time.
The menu opens with langoustine paired with white asparagus, Marcona almond and lemon confit, matched to Le Nerthe Côtes du Rhône Blanc “Les Cassagnes” 2022. Grilled scallops with saffron, PEI mussels and tomato confit follow alongside Château La Nerthe Châteauneuf-du-Pape Blanc 2023, highlighting the estate’s approach to Rhône whites.
Main courses move into deeper flavors with poulet basquaise, piperade and chorizo paired with Le Nerthe Côtes du Rhône Rouge “Les Cassagnes” 2022. An agneau provençal course with ratatouille, kalamata olive and chickpea panisse is served with two vintages of Château La Nerthe Châteauneuf-du-Pape, offering a side-by-side look at youth and maturity within the same terroir.
Dessert concludes the progression with a mousse of goat cheese and Sichuan pepper, accented by spiced plum and raspberry compote, paired with Château La Nerthe “Prieuré de Montézargues” Tavel Rosé. The pairing provides a bright, unexpected finish that underscores the versatility of Rhône wines beyond the traditional red focus.
