“V&E Restaurant Group and Fabric Group LATAM have come together again to introduce the second outpost of its popular Paperfish Sushi concept, a contemporary Tokyo-inspired izakaya with masterfully crafted Nikkei cuisine using the finest seasonal ingredients,” notes a press release.”Paperfish Sushi will be serving up creative cocktails highlighting an interplay of fresh Japanese and tropical flavors, alongside an international selection of spirits, sake, wines, beers, and champagnes.”
Perhaps you’d like to try the new featured cocktail, Chanoyu, the eatery’s take on a Japanese Mojito — but prepared with Japanese Gin with mint, lime, coconut water, matcha syrup, orange blossom water mist, then poured over dried ice, garnished with a mint spring and rose water and served tableside for two.
Small and main plates are offered including Steamed Nikkei Grouper (fresh grouper, steamed with soy sake, scallion, ginger, cilantro, then poured with hot garlic olive oil) and Ichiban Sando (crispy rice, spicy tuna, avocado, and crab salad, red tobiko, smoked bonito flakes and clarified garlic butter).
Appetizers include Tiradito Apassionado (Salmon, Passion Fruit, Philo strips, Rocoto) and Nikkei Tataki (Tuna, Peruvian yellow sauce and Foie gras).
