From top to bottom, the Canopy West Palm Beach Downtown hotel offers newly opened culinary delights.
Its first-floor Banter restaurant brims with handcrafted, locally sourced selections by five-star Executive Chef Eduardo Ruberte, while the rooftop Treehouse bar and lounge serves up light bites and signature cocktails – along with a stellar view from the 13th floor.
“My goal is to showcase the freshest local ingredients through an imaginative selection of dishes,” says Chef Ruberte, whose past roles include executive banquet chef at Eau Palm Beach Resort & Spa and executive sous chef at the W Washington, D.C., according to a press release.
“Our menu will be a celebration of Florida, with a variety of sushi, tapas and small plates designed to be shared among friends and family.”
Although the venues opened with a limited menu – featuring salads, appetizers, flatbreads and handhelds – there are plenty of options, such as tacos; lobster rolls; blue crab dip; and the Banter Burger, made with a blend of Creekstone brisket, chuck and short rib.
Entrées, to be added soon, include Florida Snapper a la Veracruzana, served with house-made sweet potato gnocchi; Chilean Sea Bass, with short-rib Cuban ropa vieja; and Pumpkin Ravioli, with pea puree, ricotta and sage cream reduction.
