Located in Downtown Miami, the restaurant is a chef’s collective with each chef presiding over an open kitchen, where diners are treated to an interactive encounter.
J.D. Hilburn serves as the culinary director for The B100M, which offers elevated comfort food such as panini, salads and the signature Rotisserie Chicken, which undergoes a three-day preparation of brining, drying and cooking, resulting in crispy skin and fork-tender meat.
Executive Chef Alejandra Espinoza brings the flavors of her native Ecuador to the table at Cotoa. The Andean specialties include Mahi Mahi Manicero made with a base of coconut, ginger, cucumber, avocado and peanuts. Dinner features tableside service and a special menu.
Last but not least, diners can find Chef Yasu Tanaka, known for his eponymous Japanese sushi bar Sushi Yasu Tanaka. The menu features a Nigiri Omakase, Maguro Flight, Salmon Sampler and six-piece Chef’s Selection.
Looking for breakfast? Starting at 7 a.m., guests can fuel up on coffee, freshly squeezed juices, smoothies and pastries. In the evening, the coffee bar transitions into Shade, a chic cocktail bar and lounge with a wine and cocktail menu overseen by spirits guru Jonathan Mendez.
