The Restorative Power Of Food

"Cooking is all about people. Food is maybe the only universal thing that really has the power to bring everyone together. No matter what culture, everywhere around the world, people eat together." 

Now, more than ever, it’s important to remember these words of wisdom from celebrity chef Guy Fieri. In a world that can feel overwhelming, coming together around a comforting meal is not only extremely restorative, it’s necessary. While recent events have altered how we connect with the world, they have validated the importance of those connections and staying tuned to what gives us joy and those we love most.

Coming from a Cuban American Jewish family who has always loved everything Italian, I can tell you food plays center stage to happiness — which is why I’m elated to share our Food & Drink issue with you.

This is probably one of my most cherished Food & Drink issues because we truly handpicked our favorites. I am beyond thrilled to feature Chef Marcus Samuelsson, who has had an extraordinary impact on the culinary scene in our country (and most recently South Florida) on our cover. “Seasoned Success” (page 62) recounts Samuelsson’s passion for cooking and community, beginning in his grandmother’s kitchen in Sweden to using his, then unopened, Miami restaurant to feed those in need at the height of the pandemic. His South Florida eatery is now up and running and I can tell you firsthand that the chicken and waffles is a transformative experience.

Another game changer in the world of food is the affable Adeena Sussman, whose bright, easy-to-follow cookbooks have helped bring Israeli cuisine to America’s table. “A Chef’s Connection” (page 68) recounts the story of the California native from an Orthodox Jewish home who made the dynamic city of Tel Aviv her home, dedicating her career to bringing the irresistible (and might I add, good-for-you!) food to everyone’s table. Sussman chats about her upcoming book, the local market that serves as her muse (one look at the images of Shuk Ha’Carmel and you’ll understand why) and her passion for connecting with others (including a famous personality!) through food. 

Is there anything better than making a living doing what you love? Yes! Making a living doing what you love when it involves food! “Cooking 101” (page 80) introduces us to the wonderful Pamela Salzman, who is doing just that. Salzman’s original career path was finance, but thankfully, she switched gears and focused on cooking instead. If you haven’t heard of her, you’re in for a treat! From her lessons to her cookbooks, I’m confident Salzman’s warm and approachable presence will soon become a fixture in your cooking world. 

For those who think preparing a meal is too complicated or time consuming, social media, specifically Tik-Tok, is here to change your mind. In “Cooking Under The Influence” (page 74) we explore how snappy food videos are influencing how we, and in particular our youth, are breaking down barriers in the kitchen. Follow five of TikTok’s most influential favorites, some barely old enough to vote, and learn how their passion in the kitchen has garnered them a steadfast following of burgeoning home cooks. You’ll leave inspired and ready to rock the kitchen!

Our small South Florida city of Surfside made headlines worldwide for the horrific tragedy that took place over the summer. My heart still aches for the immeasurable loss, yet hope you will find some solace — as I did — in exploring the exceptional culinary offerings within the city’s boundaries. “Savoring Surfside” (page 86) celebrates the wonderful, diverse restaurants that have kept locals happily fed throughout the years. After this mouth-watering read, I’m sure you’ll want to visit and show your support.
