Chef Pascal Sanchez To Helm La Goulue Palm Beach

La Goulue Palm Beach created a buzz when it opened in late 2020.

And now, there’s more hum on the island with the announcement that Michelin-starred Chef Pascal Sanchez was named executive chef. 

The restaurant, the first replica of its sister restaurant in Manhattan, is infused with a chic 1900s Parisian design. 

Sanchez, who was previously the chef for the Disney Restaurant Group, also was chef and owner of MIA in Montpellier, France, where he was awarded a Bib Gourmand by the Michelin Guide in 2013 (his restaurant was awarded one Michelin Star in 2015).

 “I am honored to have the opportunity to share my love of French cuisine with the guests of La Goulue Palm Beach,” Sanchez said in a press release. “This new menu showcases classic French bistro dishes, with new dishes inspired from my own culinary adventures throughout the years.”

The French cuisine includes Le Soufflé Au Fromage, made with Gruyère, Parmesan, white truffle oil and a garden salad and Les Escargots De Bourgogne Au Beurre D’ail, escargots with garlic-herb butter served with a grilled French baguette.

Pascal’s inspirations include Velouté D’artichaut À La Truffe Noire Melano Sporum, artichoke and melano sporum black truffle velouté, crème fraîche and Filet De Flétan seared halibut, sauce traditional vierge, aged balsamic, mashed potatoes and black olive tapenade.
