Carbone Opens Miami Beach Outpost

Familiar, yet exceptional — that’s the premise behind the new Carbone outpost in Miami Beach.

The New York-style Italian restaurant — with sister eateries in Hong Kong, Las Vegas and New York — is the brainchild of Major Food Group’s Mario Carbone, Jeff Zalaznick and Rich Torrisi, creators of The Lobster Club, Sadelle’s and more.

Carbone — designed to balance modern ideas with a nod to the past — uses the mid-century New York-style Italian restaurant model as its inspiration. The goal? A dining experience that is unlike any other diners have had before. 

Signature dishes include Spicy Rigatoni Vodka, Caesar Salad “alla ZZ” (prepared tableside) and Octopus Pizzaiolo. Others like Scallop Crudo With Pistachio and Key Lime, Stone Crab Knuckle Sandwiches and Coconut Lime Chiffon Cake were created especially for Carbone Miami. 

The décor, by designer Ken Fulk, is equally magnificent, featuring a resplendent color palette of terracotta, cream and emerald green to showcase ceiling beams, columns, damask-upholstered walls and leather-upholstered banquettes. “My inspiration for Carbone was Maria Callas and Frank Sinatra waking up in a suite on the Grand Canal after a night of passion,” quips Fulk.

Adds Carbone, “Like all of our restaurants, Carbone isn’t just about what’s on the plate. Of course, the meal is top-notch, but we want our guests to head home after dinner with happy and lasting memories.”
