Jeremy And Cindy Bearman’s High Dive Debuts In West Palm

Chefs Jeremy and Cindy Bearman – who made a name for themselves with their wildly popular Oceano Kitchen in Lantana – have something new on their plate.

The husband-wife duo recently opened High Dive, a seafood-focused eatery in West Palm Beach’s Rosemary Square (formerly CityPlace). The 180-seat spot features globally inspired small plates from Chef Jeremy, the creative mind behind Michelin-starred restaurant Rouge Tomate in New York City, and Chef Cindy, the former executive pastry chef at Jean-Georges Vongerichten’s ABC Kitchen.

“High Dive is inspired by our travels, our experience working in some of the country’s best kitchens and the desire to create a gathering space that celebrates ingredients from our waters,” says Chef Jeremy in a press release. “We are committed to sourcing exceptional products by providing the freshest seafood and working with local farms while providing guests with genuine hospitality.”

Dishes include Florida Rock Shrimp Ceviche, Pumpkin Swordfish, Savory Seafood Waffle, New Bedford Scallops and Fisherman’s Stew.

Sweets from Chef Cindy – formerly of Gotham Bar & Grill, DB Bistro Moderne, Café Boulud and Le Cirque – range from Cinnamon Cake Doughnuts to the Goodie Bowl, with chocolate mousse batter, chocolate cake scraps, banana sorbet, broken chocolate cookie, sea salt caramel and chocolate chip cookie dough.

Libations are also plentiful. Wines are sourced from small-production vineyards, while cocktails feature locally sourced herbs, juices and spirits. 

The décor is just as hip: A large mosaic of an octopus, made with hand-glazed tile, provides an ocean-themed backdrop for the raw bar.
