Ember Grill And Rosewater Rooftop Restaurants Are Now Open

Ember Grill and Rosewater Rooftop Restaurant—with 360-degree views of downtown Delray Beach—are two of the newest and hottest restaurant concepts in the city inside the newly-opened tropical luxury hotel, The Ray, located in the Pineapple Grove arts district.

Owned by Menin Development and operated by Clique Hospitality, both restaurants are led by acclaimed Executive Chef Joe Zanelli and designed by the renowned Studio Munge. 

“We wanted to bring elevated interior design, with Alessandro Munge, complemented by an elevated dining experience,” said Jordana Jarjura, President & General Counsel of Menin Development. 

Rosewater Rooftop’s glistening 22,000-square-foot rooftop bar and lounge is a tropical oasis complete with trellises, pergolas and oversized umbrellas. Serving lunch and dinner as well as a “Golden Hour” signature rooftop happy hour soiree Wednesday-Friday, Rosewater Rooftop offers global street cuisine like branzino tataki and miso glazed Chilean sea bass skewers. 

At Ember Grill, guests can enjoy a modern twist on the traditional neighborhood grill with a one-of-a-kind wood-burning Josper grill imported from Barcelona, Spain that takes center stage in the dining room. Meanwhile, a curated wine and craft cocktail program provides the perfect pairings to go alongside grilled items, like branzino veracruz or filet mignon with bone marrow butter. Open for dinner Monday-Saturday, with happy hour offered on weekdays, guests can also indulge in Sunday brunch. A private dining room is available for groups. “We wanted upscale American favorites, created with local ingredients that people want to revisit time and time again,” said Jarjura. 

Diners of all concepts can marvel at The Ray’s tropical modern architecture with living walls, rooftop gardens and large-scale art installations that offer relaxed luxury at every turn.
