How does sumptuous food prepared in wood-fired ovens and charcoal grills in an open, theatre-style kitchen sound?
That’s only part of the lure of Doya, a modern Aegean Meze Bar personifying the food, lifestyle and experiences of Greece and Turkey, with influences from the Mediterranean and Middle East.
The eatery, helmed by Executive Chef Erhan Kostepen, an original founder and former executive chef of Miami’s Mandolin Aegean Bistro; Managing Partner Jerry Böck, previously with Soho Beach House’s Cecconi’s and Prime 112 Group; and backed by founder and investor Rob van den Blink, formerly of Claridge’s in London, is now open in Wynwood.
“Our food is prepared in the purest way and often over wood fire and coals. We cook over live fire because it makes food taste better. Good food takes time: we prepare our bread dough two days in advance. We love simple, honest cooking with loud colors and big, bold flavors,” notes the eatery’s website.
Doya embraces the meze style — offering dishes with “diverse flavors and textures designed to be savored,” notes a press release.
Cold mezes include Zucchini & Spinach Pancake by Sabuli, made with carrots, green onion, dill and feta cheese; Greens & Fig Salad, composed of feta, watermelon-radish, hazelnut-pomegranate dressing; and Octopus Salad, drizzled with garlic and extra virgin olive oil.
Hot mezes feature Kofte, traditional Turkish meatballs; Lamb Chops from the grill; Grilled Whole Branzino, with lemon, and extra virgin olive oil; and Fisherman’s Seafood Stew for Two, from the wood fired oven.
Handcrafted cocktails are also available — and why not end the meal with a dessert — perhaps Caramelized Pumpkin coated with Tahini foam walnuts?
