Raw talent fuels one of Miami’s newest restaurants, Sérêvène, inside the adult-only Greystone Miami Beach hotel.
At the helm of the venue – where Japanese izakaya meets French rotisserie – are “Chopped” champion and renowned Executive Chef Pawan Pinisetti as well as Forbes Top 30 Under 30 F&B Chef Sebastian Dumonet.
Dishes at Sérêvène fuse the best of both dining styles in an eclectic menu of family-style small plates and classic dishes, featuring ingredients that are fresh, sustainably sourced and organic.
Highlights include the Poularde Teriyaki, a whole French fattened chicken carved tableside; Krispy Quail Lollipops, in a Korean gochujang marinade with kiwi carpaccio and Togarashi aioli; and Red Wine Braised Beef Cheek, in coconut curry with potato mille-feuille from the rotisserie.
Exuding a chic supper club vibe, the sexy and sophisticated venue features a soft color palette, organic modern décor and seating for up to 94 guests at plush booths and center-placed tables.
Above the 1,800-square-foot Sérêvène is UISCE (an ancient Celtic word for water), a modern whiskey lounge that curates craft cocktails “in light of a growing appreciation for the trade,” according to a press release. As for the pronunciation? It sounds just like the bar’s signature spirit.
