Mixing sleek and stylish with an air of 1950s cool might seem like a tall order, but The Butcher’s Club at PGA National Resort in Palm Beach Gardens pulls it off with aplomb.
One of the reasons? “Fast Foodies” Host and Season 13 Top Chef winner Chef Jeremy Ford is at the helm of this new creation.
Ford has quite an illustrious career — starting at age 16 when he landed the job of Garde Manger at Matthews, a four-diamond Mediterranean style restaurant. There, he perfected the basic — but very important — skill of mincing vegetables.
He was a quick learner and worked his way up the ladder –— opening restaurants including Stubborn Seed in South Beach.
The Butcher’s Club is his latest creation — and here diners will be treated to dry-aged prime cuts, a raw seafood bar, innovative cocktails, a delightful wine collection and more. Starters include Gruyère Cheesy Puffs with mornay cheese sauce and thyme essence and Ricotta Gnudi with gratitude garden mushrooms, buttery greens, black truffle and pinenut crumbs.
Among the raw bar options: Beau Soleil Oyster accompanied by ginger mignonette and house hot sauce. Main plates are just as tempting: The Bell & Evans Truffle Chicken, alongside buttery potato puree, brussels sprouts, baby turnips and natural jus sounds divine.
Vegetarians will want to try the Butternut Squash Agnolotti with brown butter vinaigrette, spiced graham crumbs and manchego. There are plenty of options for seafood aficionados — and meat lovers can indulge in favorite cuts like Porterhouse, Ribeye, Wagyu Filet Mignon and Skirt Steak.
