Nick Kenner had a dream: to create healthy food that could be made in a New York minute.
It wasn’t an easy undertaking, but he was successful, launching Just Salad in New York City in 2006. The concept caught on, and Kenner brought his brand to Florida, opening spots in Pembroke Pines and Gainesville. Recently, he debuted his first Palm Beach County eatery, in Boca Raton.
“Like many New Yorkers, Just Salad feels right at home in Florida,” said Kenner in a press release. “We’re excited to finally join the Boca community after hearing from our Boca fans for so many years. While there are plenty of healthy restaurants in the area, none offer the mix of quality, affordability and sustainability that Just Salad is so well known for.”
On the menu at the 2,300-square-foot venue: Buffalo Chicken Salad, Keto Zoodle Bowl, Spicy Chicken Caesar Wrap and Crunchy Avocado Toast – which can be served in reusable bowls. Produce, which is served raw, roasted, baked or steamed, arrives fresh daily from local purveyors, such as J&J Family of Farms in Loxahatchee.
