Chef Omar Montero says his homeland of Mexico has been his “Northstar” and his latest culinary venture Casa Ya’ax is a celebration of the rich, authentic flavors and dishes from its coast.
The indoor/outdoor restaurant in the heart of Wynwood evokes a bohemian vibe with its carved wood tables and woven rattan lampshades.
“If La Santa is my tribute to street food, then this will be a place where we can celebrate the rich, authentic flavors and dishes from across Mexico, highlighting our gorgeous coastal cuisine,” says Montero, referring to his first restaurant in Miami, known for its tacos.
The menu, which is a work in progress, celebrates both traditional and modern dishes. Entrees include Short Ribs A Los Tres Chiles, ancho, guajillo and chilaca pepper reduction, sweet-savory potato puree, crispy shallot rings and pea shoot tendrils; Medio Pollo Rostizado, 24-hour brined roasted half chicken, served over Casa Ya’ax mole coloradito, tamarind pulp reduction and white sesame seeds and Camaron Tigre Al Ajillo, black tiger prawns grilled with garlic and guajillo confit reduction. Signature Cuts meant to be shared include the Casa Ya’ax Chef Signature Dish: Grilled 8 oz. filet mignon, 8 oz. lobster tail, Hudson Valley foie gras, bone marrow hollandaise, black truffle accents and papas bravas. Desserts include Merengon De Pasion, merengue, passion fruit curd, vanilla whipped ganache, passion fruit sauce and mango bites and Arbol Sagrado, homemade mamey ice cream, pistachio sponge, vanilla crumble and buñuelo.
The cocktail menu is beyond the traditional Mexican margarita offering everything from citrusy and refreshing to spicy, smoky and zesty concoctions.
