The appealingly presented Fresh Maine Lobster Salad, with mache, orange and pink grapefruit sections, avocado and carrot-ginger dressing, is fresh, flavorful and perfect for a hot Florida day.

Also beautifully served is the delectably light Pan Seared Chilean Sea Bass, with sautéed polenta, cauliflower puree, broccoli rappini, roasted tomatoes, capers, and white wine and lemon beurre blanc. The Fresh Jumbo Sea Scallops are also an excellent and ample choice for seafood lovers. Don't overlook the Roasted Crispy Long Island Duckling, which is rich and refreshing at the same time, served with red cabbage, cranberry bread dumpling and bing cherry brandy sauce.
For dessert, the soufflés are spectacular, and the dessert coffees offer new takes on old favorites. But there's little that can top the Café L'Europe Swan: your table's very own ice sculpture, which serves up mouthwatering cookies and candies. Talk about a happy ending. O
