Introducing High Dive Seafare & Spirits, helmed by husband and wife Jeremy (executive chef) and Cindy Bearman (pastry chef), owners of the popular Oceano in Lantana.
The new Rosemary Square restaurant will surprise and delight even the most sophisticated seafood palates with unexpected ingredients and flavor combinations.
As a devotee of mussels, I was thrilled to find a new way to love them: a plentiful bowl of Steamed P.E.I. Mussels, served in a broth of green curry, coconut milk and kaffir lime. The lime brings a refreshing note to the rich flavor of the coconut milk, creating a unique broth that’s both full-bodied and light. While savoring every last mussel, I was shown a photo of a guest drinking his remaining broth with a straw – and I wasn’t a bit surprised.

The Crispy Rhode Island Calamari was also a flavor first for me. It piqued my taste buds with a combination of ginger, peanuts, Thai basil and a spicy turmeric sauce – all punctuated by a surprise addition you won’t see on the menu: a generous serving of crispy, marinated Fresno chilis.
Homemade wonton chips take the place of corn chips in High Dive’s Yellowfin Tuna “Nachos.” They’re a bowl of heaven, creatively executed with top-quality tuna, avocado, furikake, daikon, creamy sambal and a sweet-and-savory eel sauce reminiscent of eel rolls in the finest Japanese restaurants.

The Fresh Maine Lobster Roll, with crunchy celery and a perky lemon aioli, was already a mouthwatering rendition of this favorite. But, when accompanied by Old Bay-seasoned kettle chips, homemade pickle chips and pickled onions, the dish achieved star status in my book.
Don’t wait until dessert to order the Carrot-Zucchini Cake, with white-chocolate cream-cheese frosting and rum-soaked currants. It sells out fast, so tell your waiter early if you’re interested.
Chocoholics will be tempted to dive into the Goodie Bowl, comprising chocolate mousse, chocolate cake, caramel and cookie dough, topped with banana sorbet and drizzled with warm dark-chocolate sauce.
By the end of the evening, I felt like giving the Bearmans a high five – and making a return reservation to High Dive. O
