The Prohibition-era is long gone, but the notion of speakeasies still has intrigue. Today, many restaurants and bars keep the spirit of speakeasies alive by keeping essentials like the location or the chef secret. Pasta Ramen, a concept that melds Italian and Japanese cuisine into one exciting pop-up that offers a lavish multi-cultural exploration in a 13-course feast. The Wafu pasta concept originated in the 1950s in Tokyo and made its way to the United States in 2021.
The star ingredient is Noodles — ramen and pasta — bringing together the best of both worlds with high-quality Japanese and Italian ingredients, flavors, textures and techniques. Chef Robbie Felice's pasta wizardry paired with Ani Ramen House's knowledge of Japanese ingredients makes this pop-up a not-to-be-missed experience.
Felice who was nominated for a James Beard award, and his team prepare dishes like: Cacio e Pepe Fritti — cacio e pepe filled, hand-pinched gyoza dumplings, topped with fresh cracked black pepper and Parmigiano Reggiano; Truffle Porcini Ramen — porcini truffle brodo with fresh shaved black truffle and In-house dry aged Japanese A5 Wagyu.
Location is secret and part of the fun. Once diners sign up the venue is shared via text the day before the dinner.
