You won’t find just any basic sundae bar at the Polo Club of Boca Raton. Instead, homemade ice cream pops are served, which can be dipped and topped with whatever you’d like. If you need a cake, there is no need to visit a bakery. They offer in-house cakes of your dreams — they have even replicated a Chanel bag!
It’s all thanks to Executive Pastry Chef Devin Cowan, who has taken desserts to a new level since July 2021. “I take the classics and modernize them,” he says. He revamped the traditional carrot cake. “They’re usually heavy and dense,” he says. “I created a cream cheese mousse with less sugar, and the pure essence of carrot with a touch of ginger and spices. The sponge is much lighter. You must be cautious of how you change things. You want to make members happy but still be innovative. We’re respectful and mindful of their palate.” Cowan values sustainability, sourcing the right products, and assessing market trends.
Cowan is focused on mastering Jewish pastries. He serves a unique apricot cardamom and cranberry cinnamon rugelach. “I’ve innovated these items elevating their presentation and flavor. We take our time and make puff pastry from scratch. We put effort into everything.” This chef does not stay still and working tableside with the members and creating interactive desserts is his specialty!
Previously, he was at luxury resorts, including The Breakers Palm Beach. “I took this position to have an opportunity to invest in a new program,” he says. Cowan has earned numerous awards and has been a mentor on Netflix’s “School of Chocolate.” At The Polo Club, he shares these experiences with his new apprentices and teaches them his technique, work ethic, and desire for perfection.
